Simple, nutritious, and full of fresh flavour, this Quick Oven-Baked Salmon is the ultimate easy weeknight meal. In under 25 minutes, you’ll have perfectly baked salmon paired with colourful vegetables and a light, creamy dill sauce made from natural quark. The lemon adds a bright, zesty lift that ties everything together beautifully.

It’s a one-dish wonder that proves healthy eating doesn’t need to be complicated—just wholesome ingredients, simple prep, and delicious results. Ideal for busy days when you want something comforting yet clean.

Quick Oven-Baked Salmon

Serves: 2

INGREDIENTS:

  • 300 g salmon fillet
  • 400 g frozen veg mix (peas, carrot, cauliflower, peppers)
  • 200 g natural quark (0.2% fat)
  • 2 tsp fish stock
  • 2 lemon wedge
  • 2 tbsp fresh dill
  • Salt & pepper

METHOD:

  • Preheat oven to 200°C.
  • Place salmon and veg in a baking dish.
  • Bake 15–20 minutes until cooked through.
  • Mix quark with stock, dill, and lemon juice for sauce.
  • Serve salmon and veg with sauce.
