Teriyaki salmon with noodles and stir-fried vegetables

Teriyaki glazed salmon

This juicy salmon glazed in a sweet and savoury teriyaki sauce makes for a mouthwatering dinner that's both healthy and satisfying.

Ingredients - 4 servings

4 salmon fillets (500 g in total)  

200 g egg noodles (dry weight)  

500 g frozen stir-fry vegetables  

75 ml teriyaki sauce (preferably less sugar)  

2 tbsp soy sauce  

1 garlic clove 

1 tbsp sesame seeds  

salt/pepper  

1 tsp rapeseed oil for frying

Method - 20 minutes

  1. Heat up a frying pan with a little oil. Press in the garlic clove. Fry the frozen stir-fry vegetables on high/medium-high heat for 5-6 minutes. Pour into a bowl and set aside.
  2. Cut each piece of salmon into smaller pieces and fry until they are golden brown. Lower the heat to low.
  3. Cook the egg noodles according to the instructions on the package.
  4. Add the egg noodles and stir-fry vegetables to the frying pan with the salmon. Pour in the teriyaki sauce and soy sauce, and mix. Season with salt and pepper.
  5. Top with sesame seeds.
