Flavourful egg fried rice
Dive into the comforting flavours of this quick and satisfying egg fried rice meal.
Ingredients - 4 servings
600 ml cooked rice, preferably wholegrain (about 500 g cooked weight)
4 eggs
1 pack, 250 g frozen soybeans (thawed)
250 g white cabbage (about 1/4 small white cabbage head)
2 carrots
2 tbsp sweet chilli sauce
2 tbsp soy sauce
1 tbsp fish sauce
1 lime
salt/pepper
1 tbsp rapeseed oil for frying

Method - 20 to 30 minutes
- Cook the rice if it's not already cooked.
- Peel the carrots and thinly slice the white cabbage.
- Fry the carrot and cabbage on medium heat in a large frying pan until they soften.
- Add the cooked rice, soybeans, soy sauce, sweet chilli sauce, and fish sauce. Stir around.
- Crack the eggs over the rice and mix until everything has a creamy consistency.
- Season with salt and pepper.
- Serve the fried rice with lime wedges.
