Egg fried rice

Flavourful egg fried rice

Dive into the comforting flavours of this quick and satisfying egg fried rice meal.

Ingredients - 4 servings

600 ml cooked rice, preferably wholegrain (about 500 g cooked weight)

4 eggs

1 pack, 250 g frozen soybeans (thawed)

250 g white cabbage (about 1/4 small white cabbage head)

2 carrots

2 tbsp sweet chilli sauce

2 tbsp soy sauce

1 tbsp fish sauce

1 lime

salt/pepper

1 tbsp rapeseed oil for frying

Nutritional content per serving

Energy 423 kcal

Protein 20 g

Carbohydrates 49 g

Fat 15 g

Method - 20 to 30 minutes

  1. Cook the rice if it's not already cooked.
  2. Peel the carrots and thinly slice the white cabbage.
  3. Fry the carrot and cabbage on medium heat in a large frying pan until they soften.
  4. Add the cooked rice, soybeans, soy sauce, sweet chilli sauce, and fish sauce. Stir around.
  5. Crack the eggs over the rice and mix until everything has a creamy consistency.
  6. Season with salt and pepper.
  7. Serve the fried rice with lime wedges.
